This refreshing salad can be made ahead for a quick weeknight meal. Canned pineapple chunks or diced pear are other great fruit options to try.
2 cans (12.5 ounce) chicken
1 can (11 or 15 ounce) mandarin oranges
1 stalk of celery, diced
½ of an onion, diced
½ cup mayonnaise
½ teaspoon garlic powder
1 tablespoon lemon juice
Place the chicken in a medium bowl and break up the chunks with a fork.
Drain the mandarin oranges and add them to the bowl along with the celery, onion, mayonnaise, garlic powder and lemon juice.
Stir to combine all of the ingredients.
Cover and chill until ready to serve.
